Ingredients :
2 1/2 cups gluten-free plain flour
250g unsalted butter - softened
1 1/4 cups caster sugar
1 egg (free range)
2 teaspoons vanilla essence
Directions :
- Cream the butter, sugar, egg and vanilla in food processor or with hand beaters
- Add flour and whiz until combined well.
- Transfer the mixture to a large bowl and add dark choc bits - combine well.
- Line a tray with baking paper and put large dessertspoons of mixture onto tray and flatten slightly.
- Place in pre heated, fan forced oven at 170 - 180 deg C , depending on oven and bake for 15 to 18 mins or until firm.
- Leave on the tray for a few minutes then allow to cool on a wire rack - store in an air tight container.
- Enjoy ~ they won't last long!
